Hill Country Peach Cobbler

From The Mystique of Entertaining: Texas Tuxedos to Tacos by Betsy Nozick and Tricia Henry.*

¾ cup flour
1/8 tsp. salt
2 tsp. baking powder
1 ½ + ¼ cups sugar
¾ cup milk
½ cup butter
3 cups fresh peaches, sliced

Preheat oven to 350 degrees.  Sift flour, salt, and baking powder together.  Mix with 1 ½ cups sugar.  Slowly stir in milk.  Melt butter in 9 x 9 x 2 inch pan.  Pour batter over butter, do not stir.  Lay peaches on batter.  Sprinkle with ¼ cup sugar or less.  Bake for 1 hour.  This cobbler freezes well for up to 6 months.  Serves 6.
